Hummus-Filled Avocados

I enjoy keeping quick and easy recipes around for fast meals and snacks. Avocados and hummus are staples for me, and I put together this easy way to prepare them for a snack a couple weeks ago.

Ingredients:

  • 1 avocado, cut down the longer centre 
  • 2-4 tablespoons of hummus
  • 1 cut green onion (scallion)
  • ground black pepper to taste
When the avocado pit is removed from an avocado, it leaves a small indentation. Fill that with a generous spoonful of hummus. Top with pepper and onions. Place in an oven heated to 350 F for 5 minutes. The seedcoat makes the snack easy to eat without a bowl or plate.
