Vegan Apple Cake

We had some apples getting old so I made another cake inspired by a Loving It Vegan recipe. Her Vegan Apple Cake recipe was easy to simplify and make quickly.


  • 2 1/2 cups all purpose flour
  • 1 1/2 cups sugar
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp maple syrup
  • 1 cup almond milk
  • 2 tbsp freshly squeezed lemon juice
  • 1/3 cup olive oil
  • 1 tsp vanilla extract
  • 1 Tbsp apple cider vinegar
  • 3 cups apples, finely chopped (I used a food processor)


  1. Preheat an oven to 350°F
  2. Use a small amount of oil or margarine to coat a fluted tube pan or other cake pan.
  3. Mix the almond milk and lemon juice in a bowl and set aside for several minutes.
  4. Mix the dry ingredients thoroughly in a separate bowl.
  5. Add the wet ingredients, excluding the apples, and mix well.
  6. Mix in the apples.
  7. Pour into the pan and smooth.
  8. Bake for 45 minutes, and longer if a toothpick or fork does not come out clean from the cake when inserted.
