We had some apples getting old so I made another cake inspired by a Loving It Vegan recipe. Her Vegan Apple Cake recipe was easy to simplify and make quickly.
Ingredients:
- 2 1/2 cups all purpose flour
- 1 1/2 cups sugar
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp maple syrup
- 1 cup almond milk
- 2 tbsp freshly squeezed lemon juice
- 1/3 cup olive oil
- 1 tsp vanilla extract
- 1 Tbsp apple cider vinegar
- 3 cups apples, finely chopped (I used a food processor)
Instructions:
- Preheat an oven to 350°F
- Use a small amount of oil or margarine to coat a fluted tube pan or other cake pan.
- Mix the almond milk and lemon juice in a bowl and set aside for several minutes.
- Mix the dry ingredients thoroughly in a separate bowl.
- Add the wet ingredients, excluding the apples, and mix well.
- Mix in the apples.
- Pour into the pan and smooth.
- Bake for 45 minutes, and longer if a toothpick or fork does not come out clean from the cake when inserted.
