Today I made some peanut butter cookies, following a 1 Bowl Vegan Peanut Butter Cookies recipe from The Simple Veganista but spiced it up a bit with a jam topping.
Ingredients:
- 1 cup crunchy peanut butter
- 1 cup brown sugar
- 6 tbsp almond milk
- 2 tsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp baking soda
- 1 cup apricot jam
Directions
- Preheat an oven to 350
- In a large bowl, mix peanut butter and sugar
- Mix in almond milk and vanilla
- Add flour and baking soda
- Mix thoroughly, preferably with your hands
- Roll dough into small balls (about 1″) and place on a cooking sheet
- Flatten with a fork in a crossed pattern
- Top with 1-2 tbsp of jam
- Place in the oven and bake for 13-15 minutes
