Today I made The Vegan Zombie‘s “BEST Winter Soup” and it produced a wonderfully hearty, flavourful meal. I modified the process slightly, frying tofu in a cast iron pan instead of an air fryer, but otherwise kept close to their methods. Roasting vegetables first and seasoning the tofu as they did really enhanced the taste. I haven’t tried the blended version yet, but I have leftovers waiting for that.
