Last night I made some roasted beets for dinner, inspired by an Ina Garten recipe. The citrus flavours brought out some of the richness of the beets.
Ingredients
- 500 g sliced beets
- 2 Tbsp olive oil
- 1½ tsp dried thyme
- 2 tsp salt
- 1 tsp black pepper
- 1 Tbsp balsamic vinegar
- 1 Tbsp lemon juice
- 1 clementine orange
Directions
- Preheat the oven to 425ºF
- In a caserole dish (I used a rectangular glass one), mix the ingedients together until the beets are coated evenly.
- Roast for 20 minutes and turn the beets.
- Roast for another 20 minutes.
- Serve.
