Citrusy Roasted Beets

Last night I made some roasted beets for dinner, inspired by an Ina Garten recipe. The citrus flavours brought out some of the richness of the beets.


  • 500 g sliced beets
  • 2 Tbsp olive oil
  • 1½ tsp dried thyme
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp lemon juice
  • 1 clementine orange


  1. Preheat the oven to 425ºF
  2. In a caserole dish (I used a rectangular glass one), mix the ingedients together until the beets are coated evenly.
  3. Roast for 20 minutes and turn the beets.
  4. Roast for another 20 minutes.
  5. Serve.
