The Poorcraft Cookbook is a wonderful comic book about preparing food frugally, and one of my favourite recipes from it is tofu bacon. This recipe produces flavourful, spicy bacon-like slices that are delicious alone or topping plain rice, but can be thrown into dishes that would typically call for bacon.

Ingredients
1 225g or 8oz extra firm tofu
4 tbsp smoked paprika
4 tbsp cayenne
3 tbsp apple cider vinegar
2 tbsp nutritional yeast
½ tbsp black pepper
½ cup soy sauce
¼ cup maple syrup
Directions
- Freeze tofu for 6 hours.
- Defrost tofu for about 8 hours
- Cut tofu into 5mm or ¼ inch slices
- In a bowl, mix together the paprika, cayenne, apple cider vinegar, nutritional yeast, soy sauce and maple syrup.
- Place tofu slices in a storage container and coat with the mixture from the bowl.
- Allow the tofu to marinate for 30 minutes to 10 hours.
- Fry tofu in a pan on high heat with enough oil to cover the bottom.
