I flipped through The Garden of Vegan, one of my all time favourite cookbooks, and spotted a good use for some bananas I had around. The banana chips from this are sweeter and chewier than the store bought ones I’ve had before and the maple and lemon bring out more flavour. It scales easily so making a big batch is a great idea.

Ingredients
1 tbsp lemon juice
1½ tbsp maple syrup
1 banana, sliced into 2 mm thick slices
Directions
- Preheat an over to 200°F.
- Mix lemon juice and maple syrup in an small bowl.
- Coat each banana slice in the mixture and place on a lightly oiled or non-stick baking sheet.
- Bake for 2-3 hours, checking every 30 minutes to flip and prevent burning.
Notes
- This recipe scales easily so making a big batch is a great idea.
