This week I made banana bread by adapting and simplifying The Simple Veganista’s Vegan Banana Bread. This banana bread is moist and filling, and easy to make with a single bowl.

Ingredients
4 overripe bananas
1 tsp vanilla extract
⅓ cup vegetable oil
1 ¾ cup all-purpose flour
⅓ cup sugar
1 tsp baking powder
1 tsp baking soda
1 pinch salt
1 tsp maple syrup
Directions
- Preheat the oven to 350 °F.
- Grease a 9 in x 9 in pan with margarine or a small amount of vegetable oil.
- In a mixing bowl, mash up the bananas.
- Mix in the vanilla and oil.
- Mix in the remaining ingredients and blend until all dry ingredients are incorporated.
- Pour the batter into the pan and place in the oven.
- Bake for 40 minutes, but check with a toothpick in the centre after 30 minutes to confirm if the batter has cooked through (if no batter is lifted with the toothpick it is ready).
