Quick Cashew Queso

One of my favourite fast snacks is cashew queso and tortilla chips. Minimalist Baker‘s “5-Minute Vegan Cashew Queso” was thrilling when I first made it and I’ve since made some minor changes. This recipe makes a flavour-rich vegan queso that’s perfect for dipping or adding as a condiment. It’s fast, simple and delicious.

This recipe makes a flavour-rich vegan queso that’s perfect for dipping or adding as a condiment. It’s fast, simple and delicious.

Ingredients

  • ¾ cup hot water

  • 1 cup raw cashews

  • 2 cloves garlic, chopped

  • 2 tbsp nutritional yeast

  • ½ tsp chili powder

  • ½ tsp ground cumin

  • ½ tsp chili powder

  • ½ tsp smoked paprika

  • ½ tsp salt

  • 1 tbsp Sriracha or another hot sauce

Directions

  • Pour ½ cup water into a blender and add the other ingredients.
  • Blend until smooth and thick, adding more water as needed.
  • Serve as a dip or on any food you would add a cheese sauce.
