This week I made banana bread by adapting and simplifying The Simple Veganista’s Vegan Banana Bread. This banana bread is moist and filling, and easy to make with a single bowl.

This banana bread is moist and filling, and easy to make with a single bowl.

Ingredients

  • 4 overripe bananas

  • 1 tsp vanilla extract

  • ⅓ cup vegetable oil

  • 1 ¾ cup all-purpose flour

  • ⅓ cup sugar

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 pinch salt

  • 1 tsp maple syrup

Directions

  • Preheat the oven to 350 °F.
  • Grease a 9 in x 9 in pan with margarine or a small amount of vegetable oil.
  • In a mixing bowl, mash up the bananas.
  • Mix in the vanilla and oil.
  • Mix in the remaining ingredients and blend until all dry ingredients are incorporated.
  • Pour the batter into the pan and place in the oven.
  • Bake for 40 minutes, but check with a toothpick in the centre after 30 minutes to confirm if the batter has cooked through (if no batter is lifted with the toothpick it is ready).
