Canadians don’t realize how good their cheap standard grocery store brick of cheddar cheese is compared to the comparable brick of grocery store cheddar in America.
First time I tried to melt some American cheddar in a microwave I noticed it didn’t melt. It got hot, it sort of leaned over a bit, but it didn’t melt. And then the taste. It tasted suspiciously like Kraft process cheese slices.
I consulted with a chef friend and he confirmed there was a difference between Canadian cheddar and American cheddar. Basically, a number of years ago the big pizza chains (Dominoes, Little Caesars) lobbied the American government to redefine cheese. The government lowered the milk fat requirements, allowing them to substitute oil, and still call it cheddar/mozzarella/etc instead of “process cheese”. The upshot is, it saved the pizza chains a lot of money and let them legally claim they were using real cheese. But it don’t taste nearly as good or rich or melt as well as the Canadian stuff.
Wow, I didn’t realize that! I do so love cheese, so that’s quite heart breaking to know that you folks south of the border suffer from such poor quality. Y’all need to move to Canada!

oh well — if I can’t notice a difference, but they’re using oil instead of milk… my newly discovered allergy to milk might not be the end of the world after all!

Wow, that’s funny someone actually said something about that. When i went to Canada, i noticed a difference between cheeses. Needless to say, i like the Canadian cheese far better than the cheese they have down here. But, do you honestly find that surprising of America? I certainly don’t. 😀
Oh yes, i read about gay marriages the other day, and i didn’t know that Canada allowed them. I now understand why you said Canada may become the Gay Mecca. I read that gay Americans flock to Canada to get married. Interesting.
