I’m now eating the best mashed potatoes I have ever had. They’re creamy, cheesey and just right. I adapted a recipe I found online, and it worked surprisingly well, considering my lack of experience in the kitchen. I’m enjoying it well enough that I must share my recipe.
Apollo’s Cheesy Mashed Potatoes
2 lb potatoes
1 cup milk
2-3 tb butter
1/2 lb cheddar cheese (preferably old)
Prepare the potatoes in the standard way for mashed potatoes, but without any of the other ingredients. Shred the cheddar chese. Melt cheese with the other ingredients and mix them until uniform. Add the melted ingredients to the mashed potatoes and blend evenly, until creamy.
Enjoy.

It is? Maybe I measured wrong… it may have been only 1 lb. The original recipe said 2lb and made 5 servings.
