For quick and easy —and cheap—, like a lot of folks, I go to ramen noodles.
Today’s dinner was, in a nut shell, tofu, chickpeas and noodles with some spices.
For two servings I cooked 170g of ramen noodles in stock heated up with some chipotle and habanero sauces.
In a pan I fried 300g tofu and 500g chickpeas in coconut oil with dashes of Bragg All Purpose Liquid Soy Seasoning.
Once the noodles were cooked and drained I mixed everything and sprinkled on some smoked paprika.
